Zucchini-spinach soup

Winter is still here and the appetite for nutritious hot soups is growing. Once again, we have prepared for you delicious meal full of vitamins. The recipe is quite simple, so go for it!;)

Ingredients:

  • bigger zucchini, diced - 1 pc
  • medium-sized potato, diced - 1 pc
  • red onion, finely chopped- 1 pc
  • garlic – 2 cloves
  • vegetable broth- 2 cups
  • fresh baby spinach - 2 cups
  • olive oil - 1 tbsp
  • pepper
  • herbs according to your taste
  • salt

Directions:

Heat the olive oil in a pan, add one finely chopped onion along with garlic  (garlic should stay in one piece, just gently squashed with knife). Fry it for a moment. Afterwards add potatoes, zucchini, season with pepper, salt and herbs and cook for a minute. Pour over the prepared mix the vegetable broth and boil for 15-20 minutes, until the potato is soft.

Add spinach and cook for another 5 minutes. Blend the soup with a blender until it gets smooth.

You can serve it with croutons, cheese, a spoonful of yogurt or olive oil.
