sweet potatoes with avocado dip

Ingredients for avocado dip:

  • 1 avocado
  • ½ cup of greek yoghurt
  • 1 garlic clove
  • 1 lime
  • 2 teaspoons of ground coriander
  • 2 tablespoons of water
  • Salt
  • Black pepper

Ingredients for potatoes:

  • 400 g sweet potatoes, peeled and cut into small squares
  • 250 g potatoes, peeled and cut into small squares
  • 1 tablespoon of olive oil
  • 2 garlic cloves
  • Salt
  • ¾ cup of black beans (cooked or tinned)
  • 4 stripes of bacon

Method:

In an electric mixer mix avocade, yoghurt, garlic, lime juice, coriander, water, salt and black pepper. Mix until smooth and store in a fridge. Cut potatoes cook until soft, around 8 mins. Heat the oil, add garlic and stir for a bit. Add cooked potatoes and stir for a couple of minutes. Add beans, bacon, coriander and stir for another 2 mins. Take out of fire and serve.
