soul lentil soup

Are you looking for a soup that will blow away those winter blues and warm the soul? Look no more, you found it! This lentil soup not only tastes great, it also contains a high level of biologically active protein. This protein is responsible for cell, muscle and tissue regeneration. Lentils contain a complex of sugars that ensures smooth supply of glucose into blood streams and cells. Thanks to this, your body is evenly supplied with sugar and glucose what is necessary mainly for brain and nerves performance.

Besides that, lentil is one of the most generous sources of iron. It contains calcium important for bone hardening and potassium that is responsible for gradual release of muscle energy. Lentils have drainage effect and helps with weight reduction.

Ingredients:

  • 4 tablespoons of extra virgin olive oil
  • 1 white onion, chopped
  • 2 carrots, peeled and chopped
  • 4 garlic cloves, pressed
  • 2 teasponns ground cumin
  • 1 teaspoon curry powder
  • ½ teaspoon dried thyme
  • 1 large can diced tomatoes, drained
  • 250 g brown or green lentils, picked over and rinsed
  • 250 ml vegetable stock
  • 460 ml water
  • 1 teaspoon salt
  • Pinch of red pepper
  • Freshly ground black pepper
  • 100 g kale
  • Parsley for decoration

Method:

  • Cook the onions and carrots in the oil for 5 mins
  • Add cumin, thyme, curry powder and garlic. Cook for 1 mins
  • Add tomatoes. Cook for 5 mins
  • Add lentils, vegetable stock and water. Cook for 30 mins
  • Add kale and cook for an extra 5 mins
  • Add salt, black pepper and red pepper
