Baked sweet potatoes with yoghurt and banana
- 2 sweet potatoes
- 1 tablespoon of extra virgin olive oil
- 1 tablespoon of honey
- Greek style yoghurt
- 1 banana
- 1 tablespoon of dark chocolate shavings
- Ground cinamon
Preheat the oven to 200 C. Wash and slice potatoes in half. Cover in olive oil and place on a baking tray (use baking paper) with a flat side down. Bake for about 25 mins. Remove from the oven and turn over (this time flat side faces up). Drizzle with honey, sprinkle with cinamon and bake for another 5 – 10 mins so the ingredients melt together. If you can fork the potatoes easily, they are ready to be taken out of the oven. Spread the yoghurt on and put a slice of banana on top. Sprinkle with chocolate shavings.
